SLOW COOKER BRISKET
When using a slow cooker, there’s a chance meat may be too one-dimensional in flavor and texture. To get great flavor and texture, generously season the meat, and then sear it in a skillet (preferably cast iron). This gives the brisket a seasoned crust.
Ingredients
4-5lb beef brisket, trimmed
Previte’s Roast Beef Rub (or your favorite seasoning rub)
2 Tbsp. canola oil
½ large yellow onion, cut into 2” pieces
2 carrots, cut into 2” pieces
1 rib celery, cut into 2” pieces
1 cup beef broth
1 cup Townie Irish Ale
Procedure
1. Heat a large skillet (preferably cast iron) over medium-high heat until smoking
2. While skillet is heating, generously season the brisket with the dry rub
3. Add canola oil to the skillet, and sear the brisket until dark-golden brown, about 2-3 minutes per side
4. Place brisket in a slow cooker. Add vegetables, broth and beer
5. Cover slow cooker and cook the brisket on low heat for 8 hours, or until fork tender
STOUT HOT FUDGE
Yield – 2 cups
Ingredients
1 can sweetened condensed milk
1 cup semisweet chocolate chips
2 tbsp salted butter
1 tsp. vanilla extract
¼ cup Adeline Stout or Swear Jar Milk Porter
Procedure
1. Add all ingredients to a small saucepan and bring to a simmer over medium-low heat, stirring often
2. Once slightly thickened, remove from heat and serve over your favorite ice cream.
